Cheese Stuffed Meatloaf
Ingredients:
1.5 pound(s) gound beef or ground beef and pork mixture
1 cup(s) diced onion
1 cup(s) breadcrumbs
Chiffonade of sweet basil
1 whole egg
2 can(s) 8 oz tomato sauce
1 teaspoon(s) salt
1 teaspoon(s) pepper
1.5 cup(s) shredded mozzarellla cheese
1/2 cup steamed spinach well-dried (optional)
Directions:
mix together the meat, egg, crumbs, spices, egg, onion and 1 (one) can of the tomato sauce. On waxed paper form into a rectangle. Sprinkle with the shredded cheese and spinach. Using the waxed paper roll up jelly roll style. Seal end seams and transfer seam side down to a baking sheet.
Bake at 350 degrees for approximately 45 minutes. Top with the remaining can of tomato sauce and bake 15-20 minutes longer or until well browned.

My family loved this! I did changed it slightly based on what I had and the fact that I don't really measure. I used moose meat and made a stuffing from goat cheese, roasted red peppers and spinach. Instead of the classic ketchup top, I went for a balsamic glaze, and I did put save and parsley in it. It was so great to see this recipe and incorporate a ton! A great help:)
